It is that time of year when we find ourselves trying to complete those projects before the out of doors gardening and yard work calls. Set a timer and remember to get up and move around every hour or so. Stretch, look out the window, or just plain relax for a bit. Your back and mind will thank you later.
Speaking of warmer weather. Start gathering the projects for beach and summer fun now, and on those rainy days make a point to complete one or two and you will be several steps ahead with your summer stitching.
Looking for a fun gift wrap idea for spring and summer. Pack your gift for kids in a plastic pail with the little bright colored shovel. It is adorable to show and a fun added gift for summer pools and beaches.

Springtime Orange Citrus Cake
- 1 white cake mix
- 1.5 cups orange juice
- 1 orange
- 1 can lemon pie filling
- 1 can of cream cheese frosting
Follow the basic directions on the cake mix box but substituting the orange juice for the water in the recipe. Bake according to directions in two 8 inch round pans. Set aside to cool.
After cooling, with a sharp knife, slice each of the layers in half across so you have 4 layers of cake. Place the first layer on a cake plate, and add a thin layer (about 1/4 can) of the lemon pudding. Continue adding alternate layers of cake and pudding to top layer. Place top layer of cake. Ice with the cream cheese frosting.
Garnish with thin slices of orange twisted or formed into decorative shapes.
Cake tastes best when served cold.
What a wonderful treat for any occasion when you add some colored coconut grass to the bottom edges and "hide" some fresh flower blooms in the "grass".
