Hot Tips

Try making your meatloaf in a heart shaped pan for Valentines Day.  When it is done baking mix brown sugar and ketchup or barbeque sauce together and spread over the top for a red heart look.  Garnish with broccoli and carrots and baby new potatoes for a pretty presentation.

If you don't have heart shaped muffin tins, use a small ball of tinfoil behind the cupcake paper to give it that heart shaped look.  Experiment with new flavors.  Like candy red hots in corn bread muffins, cherries in chocolate muffins, raspberries in white cake and so on.  Serve them with whipped cream or butter cream frosting in a fancy long stemmed glass with a bit of powdered sugar or sprinkles or fruit for a wonderful garnish.

Chocolate Snowballs

2/3 cup butter softened
3 oz cream cheese
2/3 cup cocoa mix
1/3 cup powdered sugar                                    2 teaspoons pure vanilla extract
1 3/4 cups all purpose flour
1/4 teaspoon salt                                            2 teaspoons baking soda
1 cup finely chopped nuts
1/2 cup extra powdered sugar for rolling

In large mixing bowl, cream the butter, cream cheese, hot cocoa mix, powdered sugar and vanilla.  In a separate bowl, sift together the flour and salt.  Gradually add the flour mixture to the cream cheese mixture and mix till well blended.  Stir in the pecans.  Cover and refrigerate for 1 hour.

Pre heat oven to 350 degrees.  Roll the dough into 1 inch balls.  Place one inch apart on ungreased baking sheets.  Bake at 350 for 15-18 minuets or until firm.  Let cool in the baking sheet for 1-2 minuets.  Roll the warm cookies in the powdered sugar and place on wire racks to cool.

When cool, mix some powdered sugar with a bit of milk and red food coloring till you can drizzle a small line of frosting in a zig zag across the top.

Serve on lacy doilies with a fancy mug filled with cocoa.
